I would be pretty hard to do two colours but you can get holographic foil which looks pretty cool. I tried to make these old school so 99% sure I'm going gold.
Out of those 4 I like the top right, but I'm going be a Hobbes-hole here and make a new suggestion.
I love the idea of having MOOSE CASINO & CHIP EMPORIUM on the chip, but instead of having the font go around the chip, could you not print it the same as the other chips shown?

I know gold or silver is pretty standard for hotstamps, but is it possible to do 2 colour hot stamps?

I think he means
MOOSE CASINO on top
CHIP EMPORIUM on the bottom but not wrapped like you have it.
Like you show in the bottom left but with CHIP EMPORIUM instead of CAMBRIDGE.
Maybe put an & on both sides instead of the diamond.
