Sorry to be abrupt. I thought I would have time to get back to this quickly.
It is my experience that the tourney will end when the blinds/ante's are approx 10% of the chips in play.
At 10% blinds vs chips in play your ending level would look something like this:
Ex:
100,000 chips in play.
3 players left = average chip stack, 33,000 chips. (for easier math)
Blinds 5,000/10,000
Obviously with this scenario we will only see a few hands since each player is now at a point of having to go all in.
It rarely will get to this stage as most players are raising 3-5 times the big blind pre flop at any level. Most players will avoid letting their chip stacks get this low since they realize they are no longer a threat.Â
At the 2500/5000 level if down to 3 players there still is not much play left since the average stack will only be just over 6 x the BB. This is usually the lowest a player will allow their stack to go and now be all in.
For these reasons I see most games end before these levels except for the super aggressive blind games where they just come up out of nowhere.:)

Thanks MisFit, but I did the math, and I have enough here for the following distribution:
10 white @ 5 value    50 total
14 red  @ 25 value   350 total
6  blue @ 100 value   600 total
30 chips equal to 1000 value
30 chips x 14 players puts 420 chips in play.
If you get more then 16 players coming you are short.
With 17-18 players you could go with 10 white, 10 red, 7 blue. 27 chips p.p.
Either way it is a lot of chips to be coloured up as we go along. Not a big deal I guess. We can figure this all, game by game.
