Putting someone on...or off a hand?

One "issue" ive been having online and in B&M lately, and Im not sure if its good or bad..is that ive been putting people on what they dont have, and im getting really good at it. The only thing is, is that while im correctly putting them on cards they are not holding Im always leaving a stone unturned, has anyone been in this situation before and learned how to benefit from it and reverse this information to make it more usefull. I always try and calculate all possibilities....is there a formula that you can use to find this info out?
